Bacon Wrapped Pork Tenderloin

Ingredients
  

  • 1 pork tenderloin about 1–1½ lbs
  • 8 –12 slices bacon enough to fully wrap the pork
  • Pork seasoning or dry rub of choice
  • Garlic citrus pork rub
  • Garlic powder
  • Paprika
  • Black pepper
  • Italian seasoning
  • Butcher’s twine

  • Baking rack with drip pan
  • Sharp knife
  • Meat thermometer
  • Butcher’s twine

Method
 

  1. Preheat your oven to 400°F.
  2. Lay bacon slices side by side on a cutting board, slightly overlapping, until wide enough to wrap the pork tenderloin.
  3. Place the pork tenderloin on top of the bacon.
  4. Generously season the pork on one side, then flip and season the other side.
  5. Fold the bacon up and around the pork until fully wrapped.
  6. Secure with butcher’s twine, tying a double knot every 1–1½ inches along the length of the pork.
  7. Place the wrapped pork on a baking rack set over a drip pan to allow excess grease to fall away.

  8. Place the pan on the lower rack of the oven.
  9. Bake for about 30 minutes, then check the internal temperature.
  10. Remove the pork when it reaches 145–150°F in the thickest part.
  11. Let rest for 5–10 minutes, remove the twine, slice, and serve.
