Crock Pot Chicken Curry

This easy crockpot chicken curry is a simple, flavorful meal made with tender chicken thighs slow-cooked in a rich coconut curry sauce. Ingredients
  

  • 2 pounds boneless skinless chicken thighs (or chicken breasts)
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger
  • 2 tablespoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 2 tablespoon tomato paste
  • 1 can 14 ounces diced tomatoes
  • 2 cans Coconut milk
  • 1 cup chicken broth
  • 1-2 teaspoon salt to taste
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper optional, for heat
  • Fresh cilantro optional, for garnish

Method
 

  1. Add diced onion, garlic, and ginger to the bottom of your crock pot.
  2. Place the chicken thighs (or breasts) on top of the aromatics.

  3. Sprinkle curry powder, paprika, cumin, salt, pepper, and cayenne evenly over the chicken.
  4. Add diced tomatoes, coconut milk, chicken broth, and tomato paste.

  5. Gently stir around the edges to combine without fully disturbing the chicken placement.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. Once cooked through and tender, shred the chicken directly in the crock pot or leave whole.
  8. Stir to combine everything evenly.
  9. Taste and adjust seasoning if needed.
  10. Serve over rice and garnish with fresh cilantro.
