Ingredients
  

  • 1 corned beef brisket with spice packet, if included
  • sweet onions sliced
  • Red skin potatoes halved
  • 1 head of cabbage chopped
  • 2 cans chicken stock
  • Water just enough to cover the meat
  • Sea salt pepper, garlic to taste

  • Carrots peeled and chopped

Method
 

  1. Place the meat: Add your corned beef brisket to the slow cooker, fat-side up.
  2. Add veggies: Place sliced onions, halved potatoes, and optional carrots around the meat.
  3. Pour liquid: Add chicken stock and enough water to cover the brisket.
  4. Season: Sprinkle in sea salt, cracked black pepper, and garlic.
  5. Cook low and slow: Set your Crock Pot to low for 10 hours or high for 6 hours.
  6. Add cabbage: About 2 hours before serving, add the chopped cabbage on top so it steams gently.
  7. Serve: Slice the corned beef against the grain, plate with tender potatoes and cabbage, and drizzle with a little cooking broth. Serve with mustard or horseradish on the side.
