Make the Base:
Crush graham crackers into fine crumbs. Mix them with creamy peanut butter until you have a smooth, spreadable mixture. Press this firmly into a greased or parchment-lined baking dish to form the base of your bars.
Prepare the White Chocolate Layer:
Melt white chocolate in a microwave-safe bowl or over a double boiler. Stir until silky smooth.
Add the Festive Colors:
Divide a small portion of the melted chocolate into two bowls. Add red food coloring to one, blue to the other. Leave the majority of the chocolate white.
Decorate the Bars:
Spread the plain melted white chocolate over the peanut butter base. Then drizzle or drop spoonfuls of the red and blue chocolate on top. Use a toothpick or knife to swirl them together for a fun fireworks effect.
Finish with Coconut:
Sprinkle shredded coconut on top to give it texture and a festive look.
Chill:
Place the dish in the refrigerator for at least 1–2 hours, or until firm. Cut into bars before serving.
