Preheat your oven to 400°F and move the rack to the bottom position.
Roll out the pizza dough on its parchment paper. If it’s longer than your cutting board, that’s okay—this dough is forgiving.
Cut the dough into six long strips, roughly one inch wide.
Lightly spread pizza sauce on each strip. Using less sauce makes the dough easier to roll and keeps the filling from spilling out.
Sprinkle garlic and Italian seasoning evenly over the sauce.
On half of the strips, add red pepper flakes and Parmesan cheese for a spicier version.
Sprinkle mozzarella cheese evenly across all strips.
Place pepperoni slices slightly above the top edge of each strip. This overhang is what creates the flower-petal look once baked.
Starting at one end, gently roll each strip tightly.
Place each roll into a muffin pan to help hold its shape.
Repeat with the remaining strips.
Bake for 20 minutes, or until golden brown and bubbly.
Let cool for 1–2 minutes before serving.
