Tzatziki Cucumber Salad: Anti-Inflammatory & Protein-Boosted

If you’re looking for a quick, refreshing, and incredibly healthy meal that comes together in just a few minutes, this cucumber salad is officially your new go-to. Today with Team Donovan, we’re tossing together English cucumber, ripe Roma tomatoes, red onion, creamy tzatziki, everything bagel seasoning, and a handful of crushed cashews for extra protein and crunch.

This simple bowl is light, full of flavor, and surprisingly filling — especially for something that takes less than 10 minutes to make. It’s the perfect lunch, side dish, or afternoon snack when you want something nutritious but don’t feel like cooking.

And yes — cucumbers really are that good for you, especially for people with autoimmune conditions. They are naturally anti-inflammatory, hydrating, gentle on digestion, and packed with antioxidants. When you combine them with protein-rich tzatziki (thanks to Greek yogurt) and healthy-fat cashews, you get a balanced, nourishing dish that supports energy, gut health, and overall inflammation control.

Let’s walk through it!

What Makes This Cucumber Salad So Healthy?

Cucumbers: Anti-Inflammatory & Autoimmune-Friendly

Cucumbers are often overlooked, but they’re actually nutritional powerhouses:

  • High in antioxidants, including flavonoids and tannins
  • Anti-inflammatory, which is incredibly helpful for autoimmune conditions
  • Hydrating, since they’re over 95% water
  • Gentle on the digestive system
  • Low calorie but high volume, meaning they keep you full

People dealing with autoimmune disorders often battle inflammation, bloating, and fatigue — so foods like cucumbers are ideal for keeping symptoms calmer while supporting hydration and nutrient absorption.

Protein from Tzatziki & Cashews

This recipe gets a surprising amount of protein from two sources:

  • Tzatziki (especially when made with Greek yogurt)
  • Cashews (healthy fats + plant protein + crunch)

Together, they turn a basic veggie bowl into something that keeps you full for hours.

How I made it

In the video, I started by taking an English cucumber and running it through a mandolin for thin, uniform slices. This helps the dressing coat every piece perfectly, and it gives you that restaurant-style texture.

Next came a Roma tomato, chopped chunky for contrast, followed by slivers of red onion — also run through the mandolin for effortless slicing.

After that, I tossed everything into a bowl and added a couple spoonfuls of chilled tzatziki. Store-bought works great, but you can absolutely make your own using Greek yogurt, lemon juice, garlic, cucumber, and dill.

A sprinkle of everything bagel seasoning added depth and crunch, and then we mixed everything together until fully coated and creamy.

To finish it off, I added:

  • A little salt
  • Freshly ground black pepper
  • A small handful of crushed cashews (for extra protein + satisfying texture)

This recipe makes enough for two people or one very hungry person.
