Tzatziki Cucumber Salad

Ingredients
  

  • 1 English cucumber thinly sliced
  • 1 Roma tomato chopped chunky
  • Red onion thinly sliced
  • 2-3 Tablespoons tzatziki
  • 1-2 Teaspoons everything bagel seasoning
  • 1 Pinch of salt
  • 1 Pinch Freshly ground black pepper
  • Small handful of cashews crushed

Method
 

  1. Slice the English cucumber using a mandolin for thin, uniform pieces.
  2. Add sliced cucumber to a mixing bowl.
  3. Chop the Roma tomato into chunks and add to the bowl.
  4. Thinly slice the red onion and toss it in with the veggies.

  5. Add 2–3 spoonfuls of tzatziki and sprinkle in everything bagel seasoning.
  6. Mix until all vegetables are coated evenly.

  8. Crush cashews gently with your hand or the back of a spoon, then sprinkle over the top.
  9. Mix again and serve immediately, or chill in the fridge.
